Penne pasta, cooked according to package directions
fresh basil, sliced into thin strips
chicken breast fillet, diced
1. Heat oil in a pan, fry fresh basil leaves until crisp and remove from oil.
2. Using the same oil, cook chicken for a minute and season with salt and pepper. Add in vegetables and cook for 3 more minutes. Pour in chicken stock and bring to a boil. Simmer for another minute.
3. Blend in Clara Ole Red Pesto and cook until heated through.
4. Toss in cooked pasta. Transfer in a serving bowl and top with fried basil and parmesan cheese.
